Our 2016 Solstice Sauvignon Blanc is a new world take on the varietal with a nod to classic examples. This wine is fermented in 3 different vessels to showcase the complexities that SB can offer. 50% was fermented in a concrete egg, 30% fermented in new, large format french oak, and 20%, fermented in stainless steel. This bottling offers flavors of white peach and grapefruit. It's balanced, with a fresh, clean finish and a slightly mineral quality to it. Enjoy with fish tacos, green salad, or anything with goat cheese.
